🍽️ PREP: - Take your steak out of the fridge, and season with salt & pepper on both sides
- Wait until the steak is at room temperature — this is super important so that it cooks through properly
- Get a bottle olive oil, a tablespoon of butter, and crush 2 gloves of peeled garlic, and set them all set aside

🧑🍳 COOKING: - Pan on the stove, set to the highest heat with a healthy drizzle of olive oil, and wait until it starts smoking
- Throw your crushed garlic into the pan, swirl around, and then keep it to the side of the pan
- Lay the steak gently in the center of the pan — you should hear an instant sizzle — do not touch it at all for 75 seconds
- Take a quick look at the underside — if it's looking dark golden brown and crusty, time to flip
- Add in your butter, wait for it to melt, and baste the steak
- Wait until underside it golden brown again, and move the steak to a wooden chopping board
- Let it rest for FIVE minutes — this is so that the temperature drops, the juices are locked in, and the cooking spreads through evenly
